How to Brew
This is Medium ground suitable for the Slow Pottery Pour Over set.
Pour over coffee is a percolation brewing method where hot water is poured over coffee grounds and filters through. As the water passes through coffee grounds, it extracts soluble flavour compounds giving the brew its distinctive characteristics.
This ceramic pour over and mug set is designed to retain heat and hold hot water and coffee in the pour over for maximum flavour. We use a 1:16 ratio and a freshly roasted Medium Roast Arabica with reusable khadi cloth filters (V60-01 size). You will need a gooseneck kettle, spoon, timer and a weighing scale for this brew.
Rinse the cloth filter with hot water and pre-heat the pour over set. Weigh out 15-20g of coffee for the pour over and use your spoon to make a tiny well in the centre of the heaped coffee. Pour about 60-80 ml of water off the boil (at approx 96 deg) on to the coffee grounds using a gooseneck kettle. Wet the grounds evenly and allow the coffee to rest and bloom for about 30 seconds. Continue in a steady and even pour adding in around 60% (approx 200ml) of the total volume of water needed. You want a full cone by this point. Swirl the pour over and stir with a spoon as this will facilitate a flat bed and even extraction. Continue to pour the remaining volume of water and swirl the cone one last time before the draw down.
If you have a flat bed of coffee and not too many large granules remaining on the walls of the pour over, you’ve most likely brewed yourself a delicious cup!
Depending on your preferences, you might need to adjust the grind size. We recommend a Medium grind but go coarser or finer depending on whether you want a less extracted or more robust brew respectively.
